This is a super simple meal to put together in a pinch and it is amazingly tasty. And it does not have any cream in it but it is so so creamy.
1/2 cup pancetta, diced
1 T garlic
1 t red pepper flakes
1/2 lb Spaghetti
4 eggs
1/2 cup parmesan
1/2 cup frozen peas, heated
salt and pepper to taste
1. Boil pasta according to manufacturers instructions.
2. Meanwhile, sauté over medium heat pancetta until the fat is rendered out, about 10 min. Add the garlic and the red pepper flakes, sauté for 2 min. Make sure the garlic doesn't burn
3. Mix the eggs and parmesan throughly until it is a homogenous mixture.
4. Add the pasta to the pancetta, garlic and pepper mixture.
5. Remove from heat and add the egg mixture. Stir constantly until until the egg mixture forms a sauce that resembles a cream sauce. Add the peas, salt and pepper.
